Last week my toddler was on a banana frenzy. So like any Mom, I picked up more bananas grocery shopping. Guess who hates bananas this week? Go figure! I was so sick of looking at the “very” ripe bananas on my kitchen counter, that I decided to make cinnamon sugar banana bread.
Banana Bread Mixture:
2 ripe bananas, mashed
1/3 cup of butter, melted
3/4 cup sugar
1 egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
1 .5 cups of flour
Cinnamon Sugar Swirl Mixture:
1/3 cup sugar
1 tablespoon cinnamon
Preheat the oven to 350 degrees. Grease a loaf pan with Crisco. Next flour the loaf pan.
First mix the ripened bananas, butter, sugar, egg, and vanilla extract. Next, mix the baking soda and salt into the banana bread mixture. Last, stir in the flour.
In a separate bowl, mix together the 1/3 cup sugar and 1 table cinnamon.
Pour half of the banana bread mixture into your loaf pan. Next, pour the cinnamon sugar mixture. Last, pour the remaining banana bread mixture on top of the cinnamon sugar mixture. Sprinkle any remaining cinnamon and sugar swirl mixture on the banana bread mixture.
Bake for 45-50 minutes.
Serve with milk, tea or my favorite, coffee.
